1. The Heritage of Pinar del Río in Nicaragua

AJ Fernandez’s approach combines traditional Cuban pre-industry fermentation methods with the fertile, volcanic soils of Nicaragua’s key growing regions: Estelí, Condega, Jalapa, and the volcanic island of Ometepe.

Fernandez controls every stage of production, from seed germinating trays and nursery greenhouses to fermentation pilones and rolling tables, ensuring unyielding quality control and generous, effortless draw mechanics.
